I have been playing the Gothic games for the last month, and I have seen far too many bugs for my liking. Why must all the good games be so bug-ridden?
The only bug I can remember in the first Gothic is in the Swamp. A large chunk of the swamp sometimes just disappeared, and by that I mean a watery part of it. Where there should be swamp, there was nothing. It came back if I re-started the game, though.
Anyways, there are several bugs in Gothic 2 (NoTR addon) that have not been mentioned yet...

# In Chapter 5, when asking Diego to join your crew, he walks into his house to change from the citizen clothes into his Shadow Armour. However, when I immediately afterwards told him that he should stay in the city, he went back into the house and changed from his Shadow Armour into...nothing! He walked back out wearing nothing but his underwear! What was even funnier, was that he then started walking into Khorinis, most likely towards the ship! However, I was now stuck in dialogue mode and had to restart the game, but this is easily the funniest bug I have ever seen in a computer game.
# In Chapter 6, when fighting the first dragon, every time I got blasted by the breath attack and knocked back, I fell through the floor and collapsed to my death somewhere far below. Without exception. This resulted in me having to deviate from my normal dragon-slaying tactics to kill the beast.
# In Chapter 3, when dealing with the Possessed people, I talked to Fernando while he was rotting in a jail cell alongside Rengaru and Sarah. He attacked me, I retaliated and knocked him down. I opened his inventory and took his Almanac...only to hear his inmates accusing me of theft! They began attacking me, so I returned the favour in kind, knocking both of them to the ground. To make things weirder, the jail warden (forgot his name) came into the cell and killed all the knocked-down people. I then looted all three of the corpses and walked out of the cell without anyone saying anything...
...until the next time I walked into Khorinis, when people started talking to me as if I had killed someone! I talked to Lord Andre, who said I had been found guilty of theft and made me pay a fine. Whatever...
# More of the Possessed. When Sekob was Possessed, I knocked him down, took his stuff and was gonna leave him to his misery. But Balthasar the shepherd had other plans...I have heard of disgruntled postal workers, but disgruntled shepherds is a new one to me.
# In Chapter 5, when I opened the castle gates to let the Orcs in, the two guards on the ramparts on each side of the gate were standing around as normal, except both of them had a small puddle of blood underneath them and if I clicked on them I got their inventory instead of a conversation! Apparentely, someone had forgotten to tell them they had died...
# Also, everytime I tried to watch the cutscene that shows the Orcs storming the castle, the game crashed with an Access Violation error, and always in the same place during the cutscene.
# In the VoM, you do not swim through the river going from Xardas's sunken tower to the Orc Wall...you walk on it! Also, if you try going up the river, you start swimming the first part of the way, but then you are stuck UNDER the river. You are swimming, but you do not count as being in water, and you cannot break to the surface.
# Once, when I was trying to level up early in the game, I decided to kill the group of Snappers that are found right outside the walls of Khorinis, by the south side. Since I was a low-level weakling, I decided to kill them by crawling up on the wall from the Harbor district's side (standing directly above Edda) and nail them with a bow. This worked well enough that all of the Snappers died, save one. During my shooting spree, it took off towards the gate, where I was certain it would be butchered by the guards.
How wrong I was.
When I had killed the last visible Snapper and turned around to jump down, I found the missing Snapper standing over Edda's dead body...inside the city of Khorinis! Apparentely, it had managed to find its way through the city gate, the merchant street, past Meldor and all the way towards Edda, and decided to kill her (out of frustration, I guess) instead of me. I just finished what I had started, and afterwards jumped down to see the damage the Snapper had wrought. Oddly enough, only Edda was dead. No more fish soup for me, then...
# Finally, another funny bug I encountered. Once, when I was gonna reload a game, I accidentally chose "New Game" from the title menu instead. During the opening conversation with Xardas, I was right-clicking like crazy to skip through every spoken line, and somehow I also managed to skip the "Chapter 1" screen. This resulted in Xardas not moving towards the lectern, but instead he began to slowly levitate towards the ceiling. I didn't bother to check how far up he would go...

I think the problem is just that the game (-concept) is very complex, so it´s easy for the "bugs to creep" into the game.
I encountered the most of your bugs, but imho they are not that bad that they could lower the fun while playing.
Apparentely, someone had forgotten to tell them they had died...

Oh, that reminds me of another bug:
If I change into a creature in the Valley Of Mines, and a NPC turns hostile because he sees me as a creature he is programmed to attack, he remains hostile to me, even if I run away, change back to human form and then come back.

ASAP in chapter 2 I went into the expansion area to beat that. One time I forgot to switch armor and entered the Pirate camp with Bandit armor on. They all attacked me and I ran away. When they stopped following I changed into Pirate armor to go back... but they still attacked calling me a Bandit. You'd think if they never recognized me by anything but my armor they'd have become friendly again.
And you would expect in real life to walk in a middle of a mafia meeting wearing a police armor(you forgot that you are undercover ), they see you, you run away and if you would to return after a half of hour they will give you a glass of whiskey, talk about crimes, etc.
That's not a bug...it is called reality similarity imo

When I gave Korloth in the VoM castle back his bag of coins and he attacked me all of the paladins in the area sided with me and beat him down. There were no problems until I came back to the castle, then they made me pay a $50 fine.
And let me guess. You weren't a dragon hunter no? And if i remember well those are not in the best friendship with the paladins

But his "buddy" mercenaries who always sit around him decided making me mad was a bad idea, so they beat him down and then both of them and fester all three lunged and performed the final "killing" blow at the same time.
So my guess from with Keroloth was correct...you were a dragon hunter 
About this situation...let's assume that you are in school and a bully attacks a class-mate. You're just going to look at him how he beats him no? But if your class-mate were the one who starts fighting...will you jump then?

Well there is a difference between bugs and how a game is programmed.
A bug is an error wich can cause crashes, unrealistic view(hero entering walls or something like that), an error in the story wich leads to the imposibility of finishing a quest or maybe even the game. 
For example that's not a bug. A bug would have been if the NPC would kill you for good if you return to him. You know...even if they don't really exist, you could consider that they have memory too

Here Is a bug that happened to me it was very funny,after i became a paladin i wanted to go to xardas' tower to pay him a visit and fell into the water in the harbor of Khorinis ,so i cheated for the first time ,and i used the goto waipont cheat,the cheat teleported me into Xardas' tower but it was fluded with water and swimed in his tower,he was still reading the book.

That's because the animation of water was still enabled. You forced exit from water.
It's actually understandable but you're right. It can be considered as a bug

That's not a bug...it is called reality similarity imo 
It isn't realistic though, because I'd already completed all the pirate's quests and they all knew me. If they can recognize my face no matter what armor I'm in to attack me they should recognize it even if I'm in bandit armor to be friendly after they know me.
And let me guess. You weren't a dragon hunter no?  And if i remember well those are not in the best friendship with the paladins
I was a dragon hunter, so the paladins should have sided with him against me because he's a paladin too. Instead the other palading sided with me (dragon hunter) and killed their paladin friend. o_O

However these mercenaries were Sentenza's friends, not mine. They werthere with him long before I arrived. They spent all day every day hanging out with him in front of the farm. Then they killed him for hitting me with a stick. Not really logical. 
Maybe you improved it at a Beliar's Shrine?
There is no improvement for multiple magic hits. 
I remember another fun one. I was jumping off the barracks to run down one of the slanted stone parts towards the harbor warehouse, and I hit the wall and fell through it. Fell through nothing for a long time and then landed without getting damaged at all at the pirate cove with Skip.

Some bugs that I had:
In the VoM, Chapter 2 before doing Jharkendar, I found: a bunch of convicts alive, a few paladins (silvestro's) alive, and a squire near the waterfall, alive.
Most of them died fairly fast to hostile animals though, but I managed to save a few of them.
And the Claw of Beliar doing multiple lightning blasts on the same target or blasting multiple targets.
And ofcourse seeing Cavalorn at the stone circle without wearing armour.
"Interresting armour you got." Indeed. ^^

Question: Why do you think that sometimes, after pressing ESC and the ESC again, the Hero si pushed behinde like being hit by a troll, only without losing hitpoints?

I think this is because when you enter the menu (esc) and press then down-arrow, the game "remember" it as a backstep and when you leave the menu, it makes then the backstep you "gave in the menu".

today i thought i found an unlimited strenght bug... but smth nasty happened
well u all know gold is not a problem in gothic... u can make how much u want by forging swords or selling everything to merchants and then beat em up to recover what u sold and so on
the thing is you can buy an unlimited amount of apples from rupert(matteo's apprentice) and at 25 apples you have +1 strenght but the nasty thing is that i had smth like 300 apples and i ate 50 in a row but no strenght bonus...
so why doesn't it work?... is there smth like only a bonus per chapter or a bug that only i have

What do you have G2 simple or NoTR? cause in G2 simple the strenght bonus with the apples works only 1 time only in NoTR it work more times

i tried it in g2 simple.. but this means i should keep this tactic for the add-on
unlimited strenght with no LPs spent and no cheating sounds cool enough 4 me

I found Myxir the water Mage dead in a mine. Took a letter off of him and when I went to read it. It dissappeared out of my inventory. So I went to see if this was part of a quest and Myxir was still alive with all the other Water mages. is this a bug?

No. NPC's when changing worlds are killed and inserted into a special location(cave). And they are inserted in the new world. It's not a bug but it is a bug if you found the body in a normal cave and not a hidden one
