I didn't use a fly/no-clip command, but I managed to get behind the mountain anyhow.. There IS no behind the mountain! It's just a big hole
They never bothered to build a north side of the mountain. It's just not there.

How about getting on top of the mountain behind harbor town where the big statue used to stand?

Piranha Bytes used to build stuff just for explorers. That was what was so rewarding about Gothic 1-3: you could go back to the games several years after playing them for the first time and still find something new.
Risen is dead to me already. I played through it once as a bandit and apparently solved every quest available, found every chest in the game, every "secret" there is to find. I tried playing through it again as a mage, but quit after the lizards appeared. There's just nothing new to see anymore!

This is one of the downsides to me as well so far. The only thing I've found that could count as souch rewards are the initials behind some bushes and a small altar with a food plate on top of the first monastery building. There are also some purses hidden on some roof tops and rocks, but nothing really interesting that gives you that great feeling of having found a hidden area.
Then there are a few places that you have to fly to to reach, but they are not really hidden. One of the few places that could have been a reward for explorers is the place where the speed-rune is lying, but as the place is marked with the help of a shield, I wouldn't really call it hidden. Knowing PB, I expected hidden caves on mountain sides and all kinds of rewarding places to find by jumping, flying and nautilus-spells, but i have hardly found anything like that at all. Instead I keep getting frustrated by areas with no textures because noone thought about the fact that you can fly there. The same goes for all the "holes" in walls and under ladders and planks that turn out to be no holes once you transform to a nautilus. Blocked by an invisible wall ... because noone thought you would try to go there?
About the untextured areas, I think it's one thing that a game contains some unfinished areas where noone thought you could be able to go, without some exteme jumping and possible use of movement glitches (like in some of the previous games (Gothic?) where you could get to the top of a building by jumping at corners. But with the flying and creeping that you can do in this game, I really think that PB could have taken some time to check all the corners that you can fly around and also really give the explorers some candy to reach with those abilities.

Ive finally managed to do so by entering test mode: (typing minsky on pause menu and then pressing º)
In test mode you have to write: edit PC_HERO
then click on World -> pos and change Xm;Ym;Zm for Xm;DesiredHeightm;Zm
if you set Ym > 400m the player will not be affected by gravity; i was able to reach the statue feets and other nice stuff
Also this works for any player in the world.
setting timescale 10 helps a lot if you want to explore the world faster
