You use the left hand side to select files, and the root path entry should be such that _work is a subdirectory. Using Button #4, you can navigate (relative to the root directory) to _work/data/sounds/speech/ and then enter *.* to select all files therein. Since you don't want to pack original files, make sure to only have your new files in the directory while using Gothic VDFS.

You can find the .vdf in the attached .zip file. I did not test it in the game, and I could imagine problems when playing mods (due to timestamp either this new .vdf overriding the mods - which might use some SVM for important storytelling - or mods with timestamp in the future continuing to have loud SVM). I chose "right now" as the timestamp.
