There are a lot of plants in Gothic 3 that I have no idea what they are used for: King's Thistle, Stone Nettle, Blood Reed, Snapperweed, Toadwort and Demon Mushroom. Could someone please tell me what each plant can be used for?

EDIT: Oh ya, what is Wolfweed for too?

toadwort and demon mushrooms are for poison
stone nettle is for mana potions

Do you need a specific recipe to turn Stone Nettle into mana potions?

You can't use Stone Nettles for anything except for selling.

King's Thistles, Blood Reeds and Snapperweed are for brewing transformation potions.

You need Strange Mushrooms for brewing transformation potions. They are one of the basis ingredients.
